Recipe at a glance

  • Prep time: 15 minutes
  • Cook time: 35–42 minutes
  • Total time: 50–60 minutes
  • Yield: 8 servings

Ingredients

For the berry filling

  • 5 cups (about 750 g) mixed berries, fresh or frozen
  • ⅓ cup (67 g) granulated sugar
  • 2 tablespoons (16 g) cornstarch or arrowroot starch
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon (5 ml) vanilla extract
  • ¼ teaspoon (1.5 g) fine salt

For the vanilla cobbler topping

  • 2 cups (about 240 g) Mundus Foods Vanilla Everything Mix
  • 2 tablespoons (25 g) granulated sugar
  • 5 tablespoons (70 g) cold plant-based butter, cut into small pieces
  • ½ cup (120 ml) unsweetened plant milk, plus 1–2 tablespoons (15–30 ml) if needed
  • 1 teaspoon (5 ml) vanilla extract

Instructions

  1. Heat the oven to 375°F (190°C). Lightly grease an 8-by-8-inch baking dish or a deep 9-inch round baking dish.
  2. Make the filling: Add the berries, sugar, cornstarch or arrowroot, lemon juice, vanilla, and salt to the baking dish. Toss gently until the fruit is evenly coated, then spread it into an even layer.
  3. Make the topping: In a medium bowl, stir together the Vanilla Everything Mix and sugar. Cut in the cold plant-based butter with a pastry cutter or your fingertips until the mixture looks like coarse crumbs.
  4. Stir the vanilla into ½ cup (120 ml) plant milk. Pour it into the topping mixture and stir just until a soft, shaggy dough forms. If it still feels dry, add more plant milk 1 tablespoon (15 ml) at a time.
  5. Drop spoonfuls of dough over the berries, leaving a few small gaps so the filling can bubble through.
  6. Bake for 35–42 minutes, until the vanilla topping is golden and the berry filling is bubbling around the edges and through the center.
  7. Let the cobbler rest for 10–15 minutes before serving. Serve warm, preferably with a generous scoop of plant-based vanilla ice cream.

Notes

  • Frozen berries work beautifully—there’s no need to thaw them first. The cobbler may need a few extra minutes in the oven.
  • This recipe uses less than one 16-ounce package of Mundus Foods Vanilla Everything Mix.
  • For the cleanest slices, let the cobbler cool longer. For the best warm-and-jammy spoonfuls, dig in after 10–15 minutes.
