Mundus Bread Pudding

Bread pudding made with leftover bread, Mundus French Toast Mix, and Mundus butter. Add raisins, chocolate chips, or berries.

Serves: 6
Dish: 8-inch square baking dish, at least 2 inches deep
Prep: 15 minutes
Soak: 20–30 minutes
Bake: approximately 40–55 minutes
Rest: 15 minutes

What you’ll need

  • 240 g (approximately 6 cups) bread cut into 1-inch cubes, preferably slightly stale
  • 1½ cups Mundus French Toast Mix (approximately 240 g)
  • 3 cups (720 ml) unsweetened, unflavored plant-based milk
  • 3 tablespoons (42 g) Mundus butter, melted and cooled slightly, plus a little for greasing
  • ½ teaspoon cinnamon, optional
  • ½ cup raisins, dried cranberries, chocolate chips, or fresh berries, optional
  • Mundus Dairy-Free Whipped Cream or a little maple syrup, for serving, optional

Make it

1. Prepare the bread.

Lightly butter the baking dish.

If your bread is very soft and fresh, spread the cubes on a baking sheet and dry them in a 300°F oven for about 10–15 minutes. They should feel drier, without becoming deeply toasted.

Put the bread in a large bowl.

2. Mix the liquid.

Whisk the French Toast Mix into the milk until smooth. Whisk in the melted butter and cinnamon, if using. The mix is already sweetened.

3. Soak.

Pour over the bread. Add your chosen fruit or chocolate, if using, and gently toss.

Let stand for 20–30 minutes, folding once or twice so the cubes absorb the liquid evenly.

The bread should be softened throughout, with some liquid remaining between the cubes. If dense or very dry bread absorbs everything before it softens, add milk a tablespoon at a time.

Transfer to the prepared dish without packing it down tightly.

4. Bake.

Heat the oven to 350°F.

Bake uncovered for approximately 40–55 minutes, until the top is browned and the middle is set, with no liquid pooling when you gently press the center.

If the top browns before the middle sets, cover loosely with foil and continue baking.

5. Rest and serve.

Let stand for 15 minutes. Serve warm with Mundus Dairy-Free Whipped Cream or a little maple syrup, if desired.

A few options

  • Raisin and cinnamon: Use ½ cup raisins and the optional cinnamon.
  • Chocolate: Add ½ cup chocolate chips.
  • Berry: Add ½ cup fresh blueberries or chopped strawberries.
  • Mixed bread: Use leftover bread ends or a mixture of loaves. Different breads absorb different amounts of liquid, so check the texture during the soak.
  • Sweeter bread: Sweet rolls or another sweetened loaf will make a sweeter pudding; start with plain bread if you prefer less sweetness.

Use two parts milk to one part French Toast Mix by volume. The mix weights are estimates until its grams per cup are measured. Bread-cube volumes are also approximate.
