Mundus Butter & Soured Cream Scones
Crisp edges, a tender middle, and room for whatever you want to put in them. The pancake mix has other ambitions.
Makes: 8 scones
Prep: About 15 minutes
Bake: Approximately 18–24 minutes
Ingredients
- 2 cups Mundus Original Pancake, Waffle & Biscuit Mix, plus a little for dusting
- 6 tablespoons (85 g) Mundus butter, cold and cut into small cubes
- ½ cup Mundus Soured Cream, cold
- 2–4 tablespoons cold plant-based milk, as needed
- ½ cup chocolate chips, dried fruit, or fresh blueberries, optional
- A little plant-based milk for brushing
- Coarse sugar for topping, optional
Instructions
- Prepare. Heat the oven to 400°F. Line a baking sheet with parchment.
- Work in the butter. Put the mix in a large bowl. Cut or rub in the cold Mundus butter until you have coarse crumbs with some pea-sized butter pieces remaining.
- Add your extras. Gently stir in your chosen fruit or chocolate chips.
- Make the dough. Fold in the soured cream and 2 tablespoons of milk. Add more milk a teaspoon at a time, only until the dough holds together when pressed. It should be soft and slightly tacky, but firm enough to shape.
- Shape gently. Turn onto a surface lightly dusted with mix. Gather into a round about 1 inch thick. Cut into 8 wedges and place on the baking sheet with about 2 inches between them. Avoid kneading.
- Finish the tops. Brush lightly with milk and sprinkle with coarse sugar, if using. If the butter has softened while you worked, refrigerate the shaped scones for 10–15 minutes before baking.
- Bake. Bake for approximately 18–24 minutes, until the tops and bottoms are golden and the centers are set. Cool on the tray for 5 minutes, then transfer to a rack.
Pick a direction
- Lemon blueberry: Add ½ cup fresh blueberries and the finely grated zest of 1 lemon.
- Chocolate chip: Add ½ cup chocolate chips.
- Orange cranberry: Add ½ cup dried cranberries and the finely grated zest of 1 orange.
- Keep it simple: Leave them plain and serve with Mundus butter and jam.
Keep everything cold and handle the dough gently. If using frozen blueberries, add them straight from the freezer.
